On International Chefs Day, we want to say a big THANK YOU to our amazing camp chef and Food Services Manager, Mary! 💛 Mary`s commitment to providing delicious, safe meals to campers, volunteers, and staff is inspiring and brings joy to so many throughout the camp season. ✨ Not only does she work hard in the kitchen to make sure everyone`s dietary needs are met, but she also takes the time to sit with campers during mealtimes and join in on camp fun at activities like the Carnival. We are so thankful for her and all that she does to make camp special!
It wouldn`t be International Chefs Day without a recipe!👩🍳 Mary is sharing her GF, DF, and Vegetarian Lentil Soup recipe below:
Ingredients:
3/4 cups olive oil
3 medium onion, chopped
16oz frozen diced carrots (may use fresh)
12 garlic cloves, minced (use more if you want)
2 tbs ground cumin
1 tsp turmeric
1 tsp paprika
1 1/2 tsp oregano
(3) 28oz cans Original Rotel
3 cups brown lentils
18 cups water
8oz vegetable base
1 tbs salt
1 tbs pepper
2 tbs lemon juice (optional)
Directions:
Warm olive oil and sauté carrots and onions.
Add garlic and spices.
Cook until fragrant.
Add Rotel, water, and vegetable base.
Bring to boil.
Add lentils.
Simmer for 25-30 minutes or until lentils are tender but hold shape.
Use immersion blender to blend a portion of the soup or take 2 cups out and blend and return to pot.
Serve hot!

Did you know even dinosaurs love camp carnivals?? 🦕 😲 One of the biggest hits this fall Family Camp season was a carnival visit by Billy from Fossil Posse! Billy, local dinosaur hunter extraordinaire, dazzled our families with his knowledge of the ancient history of Colorado, complete with lifelike replicas of fossils! 🦴 We loved this fun learning addition to our beloved carnival.

Thank you to our amazing Reset & Refresh volunteers who supported our mission throughout our 2025 camp season! 🤩 Reset & Refresh volunteers are the behind-the-scenes magic makers between camp sessions who help deep clean our facilities to make our cabins, volunteer housing, program areas, The Depot, and Trent’s Cookhouse clean, safe, and ready for our next group of excited campers and volunteers. 🧹💕
This year, 95 Reset & Refresh volunteers dedicated over 405 hours to keep camp running smoothly and sparkling clean!! 👏 A massive thank you to our 2025 groups including: Peace Jam, East West, Eagle County School District, Alpine Bank, Apres Dental, Colorado Mesa University OT Program, Raise a Little Hell Club, Family & Friend Groups, Individual Volunteers, and dedicated full-time staff members! 😍

Another season has officially wrapped up, closed out by an extremely successful Walmart Day! 💙 68 @walmart Associates, along with Roundup River Ranch staff, put our campsite “to bed” this week. Program supplies have been safely stored away, benches at the ampitheater are stacked, trees are wrapped, every window sparkles, Lilly’s Garden decorations have been tucked away, supplies were donated and counted, every floor was swept and mopped, and cabins are closed until the next Walmart Day in the spring. 🧹
We couldn’t be more grateful to the Walmart team for their continued help in caring for our campsite every spring and fall for the past 15 years! 👏 YES, YES, YES, WE LOVE IT! 🫶

After wrapping up our Roundup The Possibilities Campaign this summer, this beautiful wall was installed in the entry of DJ`s Junction to recognize the incredible people who made this campaign possible! 👏 Each of the names on this wall has truly left a lasting legacy at Roundup River Ranch, and we are so excited to see the impact of their generosity for many years to come! 🧡🩵💛
